Primitivo Salento Red IGP Sweet Wine
Primitivo Red Wine Salento IGP Sweet Lucarella
The Sweet and Enveloping Soul of our Land
Vino Primitivo Rosso Salento IGP Dolce is the most persuasive and refined expression of one of Puglia's most iconic vines. Born from the burning sun of Salento and the ancient winemaking traditions of the area, this Primitivo Dolce is a truly enveloping nectar, perfect for those who love rich, soft and intensely aromatic wines. The grapes are harvested at the right level of ripeness to enhance the natural sweetness of the fruit, giving life to an elegant and persistent wine, capable of conquering every palate with its balanced sweetness.
Organoleptic Characteristics:
-
Color: Primitivo Rosso Salento IGP Dolce has an intense ruby red color, enriched by violet and garnet reflections that reveal the richness of its character and the aromatic concentration of its grapes.
-
Aroma: The bouquet is broad and enveloping, with aromas of ripe red fruit such as cherry, plum and black cherry, accompanied by sweet hints of dried figs, vanilla, cooked must and spices.
-
Taste: On the palate, Primitivo Dolce is soft and velvety, with a sweetness that is never cloying, perfectly balanced by a pleasant freshness. The enveloping flavor of ripe fruit intertwines with light spicy notes. The finish is long and persistent, with an extraordinary harmony between sweetness and acidity that invites another sip.
Pairings and Uses:
Thanks to its balanced sweetness and rich structure, Primitivo Dolce is an ideal wine to accompany desserts and cheeses, but it also lends itself to special tastings in moments of conviviality and relaxation.
Recommended pairings:
-
Chocolate and dried fruit desserts: Perfect with dark chocolate cakes, fig tarts or almond-based desserts, where its softness marries beautifully with the richness of cocoa and dried fruit.
-
Aged and blue cheeses: It pairs beautifully with cheeses such as sweet gorgonzola, refined pecorino or taleggio, creating a unique contrast between the savouriness of the cheese and the sweetness of the wine.
-
Dry pastries and traditional Apulian sweets: Excellent with typical Apulian sweets such as mostaccioli, cartellate with honey or almond paste, for an authentic and harmonious combination.
Production Method:
Primitivo Rosso Salento IGP Dolce is obtained from Primitivo grapes harvested at an advanced stage of ripeness, when the fruit is full of natural sugars. After a manual selection, the grapes are left to ferment slowly at a controlled temperature, preserving the aroma and sweetness of the wine. It is then refined in steel and briefly in typical Apulian Ceramic Containers (CAPASONE), which gives greater complexity and roundness to its aromas and flavors.
Serving temperature: To enjoy it at its best, we recommend serving it at a temperature of 12°-16°C .
Also try between 7° and 10° C combined with panna cotta or dark chocolate.
