Cotto di Mosto is a precious nectar of the Apulian peasant tradition, obtained by slowly cooking grape must until it reaches a dense consistency and a rich and enveloping flavor. This ancient product, passed down from generation to generation, is capable of enhancing the taste of desserts, cheeses and traditional Mediterranean dishes.

The technique remains secret, it harks back to ancient traditions of arts and crafts and has been handed down from father to son since 1889.

100% Italian from white grapes (Verdeca, Bianco D'Alessano).

Production Method

Cotto di Mosto is produced according to the most authentic tradition: the grape must (from Bianco d'Alessando and Verdeca grapes) is cooked slowly for hours , until it reduces and naturally concentrates sugars and aromas. No preservatives, no additives: only the pure grape juice transformed into a delight with an ancient flavor.

It is refined for approximately 12 months in ancient ceramic amphorae (Capasone).

The olives, hand-picked in our olive groves between Martina Franca and Crispiano , are milled within 24 hours in our semi-underground mill , using a stone mill and cold pressing . This process preserves the polyphenols and antioxidants to the maximum, guaranteeing a very high quality oil, with an authentic and genuine taste.
