Extra virgin olive oil is a very delicate product and can be altered by light, high temperatures and odors.
Light is certainly the main enemy of extra virgin olive oil – as it accelerates the oxidation process – heat damages the organoleptic characteristics, while external odors – easily absorbed – can inevitably alter the aroma and flavor.
Therefore, it is necessary to store extra virgin olive oil in pantries or in cool, dry rooms, protected from light and well ventilated, with a temperature of about 15-18° C and a humidity level between 40 and 70%. It is also preferable to store extra virgin olive oil in dark glass containers, which guarantees better protection of the product from light.

Extra virgin olive oil can be paired well with both sweet and savory dishes.
But it is important to remember a fundamental rule: delicate flavours require delicate oils, vice versa strong flavours require strong and decisive oils.
